Scrambled Tofu Recipe

with spinach and tomatoes

Ingredients
1/2 lb. extra firm tofu, drained and pressed
1/2 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1/2 cup cherry tomatoes, sliced
1 1/2 cups spinach
1 1/2 tsp lime juice
2 tsp cumin
1/2 tsp thyme
1/2 tsp paprika
1/4 tsp tumeric
1/2 tsp salt
Directions
Saute onion and garlic in oil 10 minutes. Add spices and mix. Deglaze with 1/8 cup water. Add tomatoes and spinach. Crumble tofu into pan and cook 15 minutes. Add lime juice and stir.
