with spinach and tomatoes
| 1/2 | lb. extra firm tofu, drained and pressed |
| 1/2 | tbsp olive oil |
| 1 | small onion, chopped |
| 2 | cloves garlic, minced |
| 1/2 | cup cherry tomatoes, sliced |
| 1 1/2 | cups spinach |
| 1 1/2 | tsp lime juice |
| 2 | tsp cumin |
| 1/2 | tsp thyme |
| 1/2 | tsp paprika |
| 1/4 | tsp tumeric |
| 1/2 | tsp salt |
Saute onion and garlic in oil 10 minutes. Add spices and mix. Deglaze with 1/8 cup water. Add tomatoes and spinach. Crumble tofu into pan and cook 15 minutes. Add lime juice and stir.
