Recipe Ingredients for Seashells with Tuna and Dijon Cream

8 oz. pasta shells
12 oz canned tuna
1/2 c. scallions
1 clove garlic
1/2 c. reduced-fat sour cream
1/2 c. reduced-fat mayonnaise
4 tsp. Dijon mustard
1 tsp. lemon juice
15 cherry tomatoes
1/4 c. chopped fresh parsley
1 Black pepper to taste
1 Lettuce leaves (optional)

Recipe Directions for Seashells with Tuna and Dijon Cream

  1. Bring 2 1/2 quarts lightly salted water to a boil in a covered 4 1/2-quart or larger pot. When the water reaches a rapid boil, add the pasta and cook, uncovered, until just tender, following the package directions.

  2. Meanwhile, drain the tuna and put in in a 3-quart or larger bowl. Using a fork, flake the tuna into bite-size pieces. Slice the scallions, using all of the whites and enough tender green tops to make 1/2 cup. Add them to the bowl. Peel and finely mince the garlic (or use 1 tsp. bottled) and add to the bowl. Add the sour cream, mayonnaise, mustard, and lemon juice. Stir well to mix and set aside.

  3. Slice the tomatoes in half and set aside.

  4. When the pasta is done, drain it in a colander and rinse it under cool tap water for 1 minute. Drain well, shaking to eliminate as much water as possible. Add the pasta, tomatoes, parsley and black pepper to the tuna and toss gently until coated with the sauce. Serve at once over lettuce leaves or refrigerate until ready to use.
