Recipe Ingredients for Sekihan (Red Bean Rice)

2 cups rice, short grain (mochi rice prefered)
1/2 cup adzuki beans

Recipe Directions for Sekihan (Red Bean Rice)

  1. Note: This recipe requires a rice cooker.

  2. In a pot, soak the azuki beans in about 3 cups water for 2 hours.

  3. After soaking the beans, bring them to a boil and let them simmer for 20 minutes.

  4. After 20 minutes, remove from heat and separate the cooked beans from the stock (or red water). Let the stock cool completly.

  5. Wash your rice and drain it completly. Pour in 1 cup of the stock over the rice and let it sit for 20 minutes.

  6. When the 20 minutes are up, add another cup of the stock and your beans. (Note: If you don't have enough of the stock, you can use regular tap water) Do not mix!

  7. Set in your rice cooker and let it cook.

  8. When it's done (and after it's steamed), mix the rice and beans.

  9. Serve warm and enjoy! :)

  10. Optional: Sever with a dash of salt and sesame seeds for a little more flavor. :D
