I bought a box of penne rigate pasta that says a serving size is 2oz dry, but I don't have a scale. Does anyone know how much that would measure out with measuring cups? Replies would be greatly appreciated.

Unfortunately measuring cups measure volume and not weight, therefore there is no way to know how much 2 ounces (dry weight) would equal out to. Don't mix these ounces up with liquid ounces which is a measure of volume and not it's weight.
Usually packages such as those will give you an approximate amount of the product to equal the serving size.

I really need to buy a scale...
I usually look at the number of servings on the box and use that to help eyeball how much a serving is. For example, if it says there are "4 servings per box", I know a quarter of the total contents is one serving.
