Share Your Healthy Crock Pot Recipes

I have some cookbooks w/ crockpot recipes, but none are very healthy - Most have alot of cheese, cream sauces, etc.  I'm going back to work and need some healthy crockpot recipes so I don't have to stress about supper when I get home.

Oh my! That sounds awesome! I just ordered some PB2 online, as they don't sell it anywhere near where I live, and I think I may have to try a nonmeatable version of that when it arrives :)
This is a great thread! I'm tagging it. Hope you'll keep adding new recipes. I like to cook but the day after day dinner thing is a drag! All I ever do is throw in some meat and vegys and let 'em cook. I'd love more crock pot favorites.

 my favorite recipe for the crock pot is stuffed peppers.  I make them with both meat and meatless depending.

 4 bell peppers (i usually use red i like the sweetness but green are just as good)

1 large potato

1/2 cup carrots

1/2 cup celery

1 medium onion

1/2 to 1 lb lean ground beef or turkey (depending on how many veggies you want)

1/2 cup brown rice 

1 large can/jar spaghetti sauce

I par boil the peppers and place them in the crockpot and add just a small amount of sauce to the bottom of each pepper.  for the filling I grind up all of the veggies in a food processor until they are very small.  I then mix the veggies in with the meat adding salt pepper and whole cumin and chili powder to my liking but any herbs would be good.  I stuff each pepper and usually have enough left over to make a meat ball and put it in the middle of all the peppers for my son who hates peppers.  i then pour the rest of the sauce over the peppers cover the pot and turn it on low for about six to eight hours.  (I usually do all of the prep the night before and put the whole crock pot in the fridge so I can just through it on before work in the morning.)

These definitely meet my criteria, in that they mostly look like they have minimal prep and can cook by themselves while I'm at work.

I can't wait to try the Chinese Hot Pot recipe.

I've tagged this thread.  I recently looked at one of those booklets in the supermarket checkout line.  Always on the lookout for crockpot recipes, this one looked interesting - Healthy Crockpot Meals.  However, more than half the recipes called for cans of condensed soup.  The only thing healthier was that they were using the "healthy" versions of cream soups.  This isn't acceptable to me. 

I'm going to be trying a substitution using half the water called for in this to get the thickness needed:

Cream of Anything Soup

2 cups non-fat dry milk (powdered)
3/4 cup cornstarch
1/4 cup chicken boullion granules
2 TBSP dry onion flakes
1 tsp. each basil and garlic powder
1/2 tsp pepper
2 TBSP dry celery flakes (optional)

This is a convenient mix for making the equivalent of a can of cream of celery or mushroom soup which so many recipes call for. To make the mix, combine all the ingredients in a bowl. Mix them up, dristributing everything evenly. Store the mixture in a quart size container, well sealed. It will keep for several months.

To cook: Combine 1/3 cup mix with 1-1/4 cool tap water in a small saucepan. Whisk until combined and bring to a boil over medium heat. Boil and stir for a full minute. Remove from heat. It is now ready to use in any recipe calling for a can of cream soup.

To make cream of mushroom or celery, cook chopped mushrooms or celery in a non stick pan and add to the finished soup.  It also makes a good white sauce base for other dishes.  For cheese sauce, when it's cooked remove from the heat and add 1/2 cup of reduced fat cheese - Velveeta is especially smooth - great on cauliflower & other veggies!  Or add some grated parmesan, minced fresh parsley, and garlic for a good Alfredo sauce.

Contains no added fat.  To reduce the sodium, use low sodium bouillon granules or powder - Herb Ox sells thes in jars. 

I'll let you know how it turns out.  I actually have dried mushrooms, which I plan to chop in the processor and add to the dry soup mix.

Just tried the ratatoille- so good! It makes a huge bowl for only 100 calories. I had it with some pasta and a little mozzerella melted on top and it pretty much rocked my world. Definitely a new staple for me.

i am new to CC. I found this great site about 3 weeks ago. It has been a new breath of life for me.Laughing My project for the last 4 years has been to put together a family cookbook.The end result was a family cookbook with 275 pages of recipes all tried and true family favorites. I would love to share one of the recipes I had from my crock pot section. Being a full time working mother of 2 teenagers its great to get home and have dinner done.

Chicken Chow Mein

1 Tbsp.olive oil (or Pam)

4 medium carrots sliced thin

1 1/2 cups sliced celery

1/4 tsp.red pepper flakes

1 medium clove garlic crushed

1 can (8oz.) water chestnuts

1 1/2 lbs boneless,skinless chicken breasts cut into 1 inch cubes

1/3 cup light soy sauce (you can use less ~according to taste)

1 cup low sodium chicken broth

1/4 tsp ground ginger(I like fresh)

half a bag bean sprouts   (use the whole thing if you like sprouts)

6-8 green onions sliced

1/4 cup cornstarch

1/3 cup water

Brown chicken in skillet with oil or pam. Place all ingredients in crock pot except for Cornstarch and water.Cover cook 6-8 on low.(Check after 6)Combine cornstarch and water in small bowl and mix well.,add to crock. Put crock pot on high cook until mixture thickens about 15-30 minutes.If you are in a hurry you can do the last step on top of the stove faster... serve as is or over brown rice,my family loves the chinese noodles but the are not figure friendly.Surprised

My grandma bought me a crock pot when I first moved out of my parents place and went on my own. I love to make chili and spaghetti sauce in it!

I defiantly want to try this recipe now though! Fat Free Crockpot Ratatoille! It sounds delicious! :D
