Yummy scrummy good nutritional value and very low in calories if you have it with no extra potatoes, you can eat on its own or with yummy braised cabbage.

Recipe Ingredients for Shepherd's Pie with soya mince

10 oz potatoes, cooked
1 tablespoon margarine, for potatoes
1 tablespoon milk, skimmed, for potatoes
2 1/2 ounces (70.875g) soya mince
1/4 pint boiling water, to rehydrate mince
0.18 oz (5g) bouillon - swiss vegetable, powder , to rehydrate mince
3/4 tablespoon olive oil
1/2 medium onion, chopped finely
1 garlic clove, chopped finely
1 1/2 oz mushrooms
1 1/2 oz carrots, diced
1 oz celery, chopped
1/2 pint boiling water
0.18 oz (5g) bouillon - swiss vegetable, powder
1/2 tablespoon worchestershire sauce
1 1/2 oz frozen peas
1/2 tablespoon tomato puree
200 grams canned tomatoes, chopped with juice
1/4 tablespoon dried mixed herbs
2 1/2 grams bay leaf
1 salt and pepper, season to taste
1 oz cheese, grated for placing on top of shepherd pie

Recipe Directions for Shepherd's Pie with soya mince

  1. Mash the cooked spud with the milk and margarine set aside to cool.

  2. Rehydrate the soya mince with the stock and allow liquid to absorb.

  3. Heat in a large saucepan the oil and fry of the onion until soft, now add the garlic and mushrooms and fry for a few minutes, then add all other veggies except the canned tomatoes puree and peas, and saute the vegetables with lid on for about 5 - 10 minutes on a low heat, now add the worchestershire sauce, soya mince, stock, tomatoes, puree and stir well. Bring back to temperature, then add the herbs seasoning and bay and stir well, place lid on and simmer for 20 minutes, then add the peas stir and simmer for 5 minutes, set aside until cool. Drain any unwanted liquid off, but don't drain dry and keep liquid you can use this for gravy!

  4. Once mince is cooled put in a large ovenproof dish and then top with the mash, for a really posh sheherd you can pipe the mash on, we normally smear it on top, then add the grated cheese evenly on top.

  5. Place in a pre heated oven gas mark 7 for 20 minutes or till shepherd is golden brown and bubbling, if you want the cheese to be extra toasty, place under a high grill to finish it off.

  6. Serve with your favourite veggies and make up the gravy by heating the juice up in a small saucepan, take off the heat and then add 1/2 - 1 tablespoon potato flour, mix rapidly until smooth and thick, serve and pour on the pie and veggies delisious and all you need to add to your calories is the potato flour.
