Sherry's Sauteed Swiss Chard Recipe

Makes 4 servings


yummy swiss chard sauteed with onions and garlic. Use a cast iron pan to increase the iron in this dish. This is great served over brown rice. Leftovers are great in a wrap the next day or added to soup.

Ingredients
1 onion, chopped,
3 cloves garlic, minced
1 tbsp olive oil
6 cups swiss chard, chopped
14 1/2 oz tomatoes
Directions
  1. heat a cast iron pan to medium high. Add oil, onions and garlic. Saute until soft, but not brown. Reduce heat to medium if necessary.

  2. add swiss chard and continue to saute turning often until swiss chard is soft.

  3. stir in diced tomatoes (with juice). reduce heat to low and simmer a few minutes to warm tomatoes.
