I start this in the late morning, leave it on low while doing other things and it's ready by dinner time, great for a slow cooker. It probably has less calories than calculated, since you won't be "eating" the broth it's cooked in. You can also use beef or chicken.

Recipe Ingredients for Shredded Pork for Mexican Tacos

1 tsp canola oil
1/4 small onion, sliced (preferrably sweet yellow)
1 Garlic Cloves
1/2 cup Water
5 grams (1/2 Cube) vegetable or tomato bullion
14 gram Jalapeno, whole
1 tsp. Bay Leaf (1 Whole Bay Leaf)
5 Black Peppercorns
2 1/2 lb Pork Shoulder, whole
1 Salt
1 Pepper
1 tsp Adobo Seasoning
1/4 tsp cumin

Recipe Directions for Shredded Pork for Mexican Tacos

  1. Place the first 3 ingredients in a medium sized pot over low heat and soften (these should not become "crispy" or burn).

  2. Add Water, Bullion, Jalapeno, Bay Leaf and Peppercorns. (Start with 1/3 cup of water, if the mixture seems too salty, add more).

  3. Season Pork Shoulder with Salt, Pepper, Adobo, and Cumin.

  4. Add to pot and cover, keep on low, checking every 1 & 1/2 hours and turning. It's done when you go to turn it and it just falls apart effortlessly.

  5. Pull pot off of burner, allow to cool.

  6. Once it's cool enough, using clean hands, pull that savory pork out, DRAIN WELL (Unless you like soggy tacos).

  7. At this point, decide if you want to be good (remove visible fat and toss), or have a treat (keep/mix fat in).

  8. Place in a large bowl, effortlessly pull it apart with your fingers and mix about, adding salt and pepper to taste, as well as cayenne pepper if it is not spicy enough for you.

  9. This makes 10 generous 1/4 cup servings/filling for Large tortillas.

  10. Recommendations - White Corn Tortillas: Run each side under your tap real quick, immediately throw on a pan (over medium - medium high heat), flip each side, this gives them the authentic "soft taco" style. Frying/hard shells not recommended for this rich filling.

  11. Fillings: Shredded iceberg lettuce, sprigs of cilantro, onions, and a small squirt of lime.
