Recipe Ingredients for Shrimp & Lemon Skewers
| 1 | tbsp extra virgin olive oil |
| 1 | tbsp balsamic vinegar |
| 3/4 | tsp lemon zest, finely grated |
| 1 1/2 | tsp fresh lemon juice |
| 1/8 | tsp kosher salt |
| 1/8 | tsp fresh ground black pepper |
| 3 | cloves garlic, minced |
| 40 | large shrimp, peeled and deveined |
| 3 | lemons , sliced into 16 1/4" slices |
Recipe Directions for Shrimp & Lemon Skewers
- Combine marinade ingredients (olive oil through garlic) in a zip-lock bag. Add shrimp to bag, seal, shake, and refrigerate for 30 minutes or up to 3 hours.
- Remove shrimp from marinade and thread with lemon slices onto presoaked skewers, about 5-6 per skewer. Reserve marinade for basting.
- Grill shrimp 3 minutes per side over medium heat, basting with reserved marinade.
- Serving size is 2 skewers per person.
