SICK of stir fry, soups and salads
meat free dinner ideas anyone?? I'm going shopping tonight:)

1 (15 ounce) can black beans, rinsed and drained (or cook your own dried beans)
1 cup cooked brown rice
1 small onion, finely chopped
1 egg, lightly beaten
6 tablespoons salsa, divided
1/4 cup reduced-fat sour cream (optional)
4 lettuce leaves (optional)
4 slices reduced-fat Cheddar cheese (optional)
4 hamburger buns, split, OR your favorite bread (optional)
In a large bowl, mash beans with a fork. Add the rice, onion, egg and 2 tablespoons salsa; mix well. Drop by 1/2 cupfuls into a large nonstick skillet coated with nonstick cooking spray or brushed with olive oil. Flatten to 1/2-in. thickness. Cook over medium heat for 4-5 minutes on each side or until firm and browned.
In a small bowl, combine sour cream and remaining salsa. Place a lettuce leaf, burger, sour cream mixture and slice of cheese on bun/bread, or eat by itself.
beans and rice. black beans (or pintos) heated with tomatoes and green chiles (or fresh salsa) then poured over rice. Any liquid from the beans is soaked by the rice. I had this last night. Carbs, protein and veggies all at once.
those burgers do sound good! thanks for that, I have actually been wanting to start making my own cause the commercial ones have so much sodium :(
Spicy Frittata
Ingredients
2 eggs, 6 oz new potatoes (cooked), 1 chili pepper, deseeded and finely chopped, 2 spring onions, (scallions) chopped, 1 tsp olive oil 1 tomato, chopped, 1/2 oz cheese
Directions
- Whisk the eggs in a bowl and add the chili pepper, spring onions and tomato
- Heat the olive oil in a small non-stick frying pan
- Slice the potatoes and add to the pan. Saute for a few minutes allowing them to brown a little
- Pour the egg mixture over the top and spread evenly, tipping the pan to bring runny pools of egg to the edges
- When set, sprinkle on the cheese, place the pan under a hot grill and cook until bubbling and golden
- Serve in thick wedges either hot or cold
TACOS!!!
We went to our favorite veggie restaurant and they had purple potato tacos.
They mashed some purple potatoes and left some chunked, and added spices (garlic, cilantro, pretty much what you would add to guacamole, but no avocado)
Top it with guacamole, and serve in small grilled corn tortillas, and voila! I know it sounds a little plain, but they're so good.
When we made them at home we added lettuce to the tacos and mushrooms to the potatoes. yum!
This is amazing. We ate it two nights ago for dinner. It's very versitile and doesn't take much effort, either.;]

Last night I made those veggie burgers justlaura suggested... very good! I used lentils instead of black beans, egg beaters instead of eggs and added some cooked carrots chopped up.. also some bread crumbs so they stuck together better.. I made a big batch of the batter so I'll be eating those for a few nights... they are yummy!

I buy low carb wraps, black beans, salsa, avocado, rice and Morning Star Meal Starter Chik'n strips and roll it all up.
I think they are realllly good.
I'm not a vegetarian, though I do enjoy going meatless now and then. My boyfriend, however, is one of those people who believes he'll lose his strength or something if he doesn't eat meat every day, and even HE loves these "burgers." :)
Do a search for Indian or Thai recipes. They have tons of vegetarian ideas that are delicious.
justlara - I put the onion and carrots in a food processor first, then added the lentils and food processed them in with it as well, then added the rice.
my boyfriend is a huge meat eater too.. so hopefully he will like these. When I fist met him he would just eat peices of meat and cheese all the time.. he likes a lot of my veg foods though :)
