Silken Tofu recipe
I have a package of silken tofu that I am not sure what to do with. Originally I wanted to make Korean Tofu Soup, but I changed my mind. Anything else I can make with it?

Make it into a scramble (like you would with an egg...can even add an egg), add your favorite scramble vegetables (I like mushrooms, red peppers and spinach), sprinkle some salsa and cheese on it, then wrap it in a tortilla.

Have you watched the featured video at the top of this forum. It's all about cooking with tofu. Maybe you'll get some ideas from that.
If it's soft silken tofu, it can be used in smoothies and desserts.
You can make a low cal dessert with silken tofu. Put it in the blender with some splenda and berries, place the mixture in individual serving glasses and refrigerate. It turns out to be a mouse-like texture. I've done this a few times and even friends who don't like tofu didn't know the difference.
Silken tofu does not make good scrambles, it's extremely soft. Firm (non-silken) tofu makes good scrambles.
I like silken tofu blended with cocoa powder & davinci's sugar free syrup, but that's me :)
You can also find recipes using it in lieu of mayo (such as in artichoke dip) and eggs in baking.
I have used silken tofu to replace shortening in a oatmeal cookie recipe and it worked really well. Cuts out so much fat and adds a lot of protein. I have also seen recipes for chocolate tofu cream pie.
Some quick easy ideas...Whip it up into a smoothie. Blend it with you favorite tomato soup to make it creamy. Use it in place of cream in almost any recipe. Stroganoff would be great!
