I am needing to eliminate simple carbs from my diet as they are making me really sick. Well besides this being hard because I can't seem to decide if half the things I want to eat are simple or complex carbs I can't get enough calories in. I have done a little whole wheat flour to make pasta and a bread but pretty much am only eating nuts, veggies and meat with occasional fruit. I am really limiting my dairy as lactose is a simple carb but do on occasion have some. And when I say not enough calories I mean no where near where I should be. What are some good not really filling things that have no sugars and arn't simple carbs to add to up calories?

Complex carbohydrates also include...... new potatoes, sweet potatoes, squashes, yams, brown rice, wholegrain foods (pasta, bread, crackers, breakfast cereals), oats/oatmeal, barley, quinoa, starchy vegetables (carrots, peas, sweetcorn, root crops), pulses/legumes (beans, lentils, chickpeas), nuts, seeds, all other vegetables, plus fruit ..... so you need to broaden your diet considerably to include plenty of these natural, wholefoods.  You should be able to buy wholemeal pasta and bread ready-made.

The missing element in your diet seems to be fats. Nuts are fine but you also need things like olive & other oils, avocados, oily fish, seeds, and some lower-fat dairy products. 

Simple carbohydrates are only sugars and simple starches.... it's a very narrow range of foods you're trying to avoid.  If you stick with wholefoods rather than very processed foods you'll be fine.  But do plan your day better so that you're not undereating going forward..... that would be far more unhealthy than a few simple starches.

Menu Ideas

  • Breakfast.... oatmeal with honey & milk or eggs with wholegrain toast
  • Lunch... a wholegrain sandwich filled with cooked meat and salads or a chunky soup made with potatoes, vegetables and lentils served with wholegrain bread. Some fresh fruit
  • Supper...  A casserole based around beans and root vegetables, some brown rice or  some grilled fish with wholewheat pasta, peas, sweetcorn and fresh tomato sauce.   A little dark chocolate (relatively low in sugar)
  • Snacks.... nuts and raisins, yoghurts, wholemeal crackers with peanut butters, hummus dip with raw vegetables, more fresh fruit.....

alot of that sounds good but I can't have the honey or the chocolate and have to be really careful with the milk and sugar in the bread as well as the tomato sauce...oh and I don't think I have seen sugar free yogurt.......I did get some sugar free peanutbutter that I might try tomorrow. I really can't have any sugar or I get reallly sick. I had 1  bite of cake thinking that would be fine....nope got super sick from it about a month ago and have had very trace amounts of sugar since then....it's so frustrating!

By 'tomato sauce' I mean a sauce made with fresh or canned tomatoes.. bit of garlic, a few herbs, some olive oil etc.   Sugar-free yoghurt is simply plain yoghurt... you can add your own fruit or other flavouring.

I've never actually heard of someone having such a bad reaction to sugar before, unless they were diabetic or similar.  And, even then, the tiny amount of sugar in a slice of bread doesn't usally make anyone sick.  You say you have PCOS in your profile so diabetes & insulin resistance could be a factor.  Have you seen your doctor?  What do they think causes the problem?

I had never heard of it either. I am in the process of trying to figure it out with my dr we are doing a ton of testing...UGH It is very frustraiting. There are quite a few times where I get sick and then look back and realize that something had sugar in it. The only plus side to it is I have lost 10lbs since the middle of august ( I am a very slow loser and usually this would take me 4 months to lose) and in 3 weeks I have lost an inch in my waist. So it's deffinatly put me back on track to lose the rest of the weight. I had never heard of quinoa before but looked it up and think I might have to try to find it and give it a try.
