simple daily vegan meal plan

im tired of not knowing what i want to eat/being too lazy to cook or go out to buy ingredients to make food so I am setting up a plan of some things i can eat everyday that i love and that are healthy

also i have ulcerative colitis so i am trying to make this a very simple diet that is easy to digest. so this is kinda similar to the brat diet

throughout the day i will have these things to eat, i will probably combine them all in different ways each day to keep it interesting but i think i could hang with these items without a problem.
1/2 block of tofu
2 cups of cooked white rice
2 or 3 slices of potato bread
1 avocado
1 sweet potato
1 banana
all of that is about 1400 calories a day

also i added it up price wise and it should cost roughly $33/week
my weekly shopping list will look like this
4 blocks tofu
7 sweet potatoes
7 avocados
7 bananas(i can see us needing to hit up the grocery 2 times a week for bananas so they are fresh)
1 2lb bag of rice
1 loaf of potato bread.

simple enough. this is day 3 and im absolutely loving it!

Thats all the food for the day?

I am not vegan, but that doesn't seem like it would be very filling.

those items are pretty heavy, they are filling, i promise!

your lists look good, and simple is always nice, but i did notice your lists don't contain any vegetables/greens. perhaps you just didn't list that? other than that, i like your choices =)

oh yeah, i saw the sweet potatoes, mainly i meant leafy green vegetables. but any vegetable counts, right? =)
