I was craving pad thai tonight and tried to make my own! I was very impressed with myself, it actually turned out very tasty and healthy! Only several hundred calories - super simple as I'm a student with limited $, time and resources on hand.
With drained Tofu Shirataki noodles, I just started throwing various things into the stir fry. Didn't measure anything, but the ingredients I used were:
-frozen vegetables (mix of carrots, peas, etc)
-Red chilli flakes
-almond butter (or use peanut butter, I only had almond butter)
-chicken breast (or use shrimp too if you have some)
-A lot of ketchup (I guess this is the least healthy thing in the recipe as its all sugar)
If you ask me, my pad thai tasted better than the pad thai i ordered for lunch yesterday (which undoubtedly, wayyy unhealthier and at least 3x more cals)
