Single Serve Casserole Dishes
I was recently given a set of single-serve casserole dishes, they're beatiful and i would love to be able to use them but I don't know what to make in them. Thanks for all ideas.
It would have to be something that was attractive enough to serve solo. Toppings neaten things off nicely. I'd use them to make individual Bean Casserole with an Oat Topping or Cottage Pie or a Baked Ratatouille. Depending on the shape you could get away with Lasagne.... or, failing that, you could have individual Pasta Bakes with something attractive sprinkled on the top. Chunky soups would be good, maybe... French Onion Soup with french bread slices on top, sprinkled with cheese and then grilled.
gi-jane, that baked ratatouille dish looks yummy, but is it really just 1 serving? 860 grams sounds like a bit much to stomach..
It's a vegetarian main course but you could halve the portion-size and treat it as a side-dish. I enjoy it as a main-dish personally because I hate feeling hungry when trying to lose weight.... filling but low-cal tasty vegetarian food (and that one is only 443 cals with the cous-cous) ticks all the boxes for me. ![]()
Do you make casseroles now? What I would do is just make my favorites and divide it among the individual dishes, then bake it for a little less time. There's a low fat Mac & cheese recipe in the current Recipes Blog. Click on Blogs in the menu bar, then Recipes from the pull down menu. It appears on Fridays, so you can't miss it.
You could also make my favorite Italian casserole, Tiella, in the little dishes. My recipe is for 8 servings, so if you have the usual set of four dishes, cut the ingredients in half. I've given the basic recipe with the traditional vegetables, but you can layer in browned ground turkey or other meat if you like. I don't put cheese or bread crumbs on top of mine, but if you did, and let it get golden, it would make a nice presentation.

Amen to filling low-cal vegetarian foods! I have no problem with eating them as a main dish, not at all one of those people who must have meat with every meal. However, there`s not much protein in there, any thoughts on tossing in some beans, or maybe an egg or two? Think it would alter the final result much?
clairelaine- I grew up eating Tiella. One of my Mom and Gramma best dishes. Funny to see it mentioned.
