Sunday, we shall make latkes for the first night.
We'll take the menorah out, I'll say the blessing, light the candle and open my first gift.
That's it this year with it just being K and I and no kiddos.

It's not Hannukah without Latkes. :) It's just not.
The interesting thing is.. I have 8 packages from my in laws, one for each night of Hannukah (they go all out for the holidays. K has between 15 and 20.)
It's an amusing game of "What do I want to open first?" :D
My Mom had a good friend that was Jewish and learned how to make latkes. Mom used to make them often and we always celebrated the first night of Hanukkah somehow. Why? Because my Mom, being who she was, said it was important to never forget how the Jews were persecuted.
Her friend survived the Holocaust by being hidden by a Christain family. But she lost 38 members of her family. She was the only one in Europe to survive and after the war, was sent to family (a mother's cousin) that had gotten to the US in the late 30's. I can only assume her stories really impacted my Mom and thus, her need to remember.
EDIT: And on the first night, my daughter gets a "remembrance" gift. We also have several very good Jewish friends and our old landlord's wife was an Bergen-Belzen survivor. We honor those friends each year.

I'm not seeing the connection between Latkes and the Holocaust, but it's good that your mom didn't let you forget what happened.

Latkes are pretty easy to make. :) The BIG thing you have to remember with latkes is to either add some breadcrumbs/matzo meal, or squeeze the potatoes through a cheesecloth to help remove some of the extra moisture or the latkes won't stay together.

And looks like M will have to meet me. Sadly, he has to attend a visitation for a guy from his work who died on Sunday. 61 years old and hit head on by an 18 year old girl. Two lane road and she didn't want to wait for a right turning vehicle so she swung left, into the other lane, to go around it. Her impatience cost this man his life.
