Slow Cooker Chickpea Coconut Curry With Coconut Rice

Recipe Ingredients for Slow Cooker Chickpea Coconut Curry With Coconut Rice

1 teaspoon olive oil
1/2 yellow onion, chopped
1 clove garlic, minced
1 tablespoon minced ginger
15 ounces Garbanzo Beans (Chick Peas), Organic
2 cups chopped tomatoes
2 cups cauliflower
1 sweet potato
1 cup vegetable broth
1 tablespoon garam masala
1/2 tablespoon curry powder
1 teaspoon salt
2 cups baby spinach
27 ounces Light Organic Coconut Milk
1 1/2 cups organic brown rice

Recipe Directions for Slow Cooker Chickpea Coconut Curry With Coconut Rice

  1. Heat the oil in a pan and saute the onions, garlic, and fresh ginger for seven minutes.

  2. While that's cooking, prepare the coconut rice by adding the rice, can of coconut milk, water, and salt to a saucepan. Heat on high bringing to a boil, then cover, reduce heat to low, and simmer for 40 minutes. Turn off heat and allow to sit covered for 10 minutes. Then fluff with a fork. Store in a glass container in the fridge for later.

  3. Transfer the onions to the slow cooker and add remaining ingredients except for the spinach.

  4. Heat on low for six hours (high for four hours).

  5. Before serving, stir in the spinach and heat for five more minutes.

  6. While that's cooking, warm up the coconut rice. Scoop some out on a plate (about half a cup) and top with a few heaping spoonfuls of the curry. Enjoy!
