This is a slow cooker recipe that doesn't require much preparation, but cooks for about 7 - 7.5 hours. Consider adding more spices, like garlic, to your taste. Also, some like to add some cheddar cheese.

Recipe Ingredients for Slow Cooker Creamy Potato Soup

1/2 lb. bacon, cut into 1/2 inch pieces
1 onion, finely chopped
21 oz condensed chicken broth
2 cups water
5 large potatoes, diced
1/2 tsp salt
1/2 tsp celery seed
1/2 tsp pepper
1/2 cup all-purpose flour
2 cups half-and-half cream
12 oz evaporated milk

Recipe Directions for Slow Cooker Creamy Potato Soup

  1. Cook bacon in skillet. Remove and store in refrigerator. It will be added back in at end of recipe.

  2. Cook onions in same skillet and drain off any excess grease.

  3. Transfer the onion to the slow cooker and stir in chicken broth, water, potatoes, salt, celery seed and pepper. (Consider adding more spices to taste - like garlic). Cover and cook on low 6 - 7 hours, stirring occasionally.

  4. In a small bowl, whisk together the flour and half-and-half. Stir into the soup along with the evaporated milk. Add the cooked bacon reserved in the first step. Cover and cook another 30 minutes before serving.
