Recipe Ingredients for Slow-Cooker Hearty Borscht

2 lbs red beets, peeled and halved
800 g rutabaga
134 g yellow onion, ends trimmed, peeled, quartered
15 g Vegetable Bouillion
4 tbsp canned tomato paste
550 g broccoli slaw
2 tbsp dried dill
3 tablespoon red wine vinegar
3 tbsp fresh lemon juice

Recipe Directions for Slow-Cooker Hearty Borscht

  1. Put beets, potatoes, onions, broth and tomato paste into a slow cooker and cook on high heat for 4 hours or low heat for 8 hours.

  2. Working in batches, carefully transfer half of soup solids to blender and purée until smooth; return to slow cooker.

  3. Add cabbage, stir well and cook on high for 45 minutes.

  4. Add dill, vinegar, lemon juice and salt & pepper to taste.

  5. Ladle soup into bowls and top with the garnishes of your choice (yogurt, parsley, eggs, lemon wedges, sour cream).
