Smashed Potatoes Recipe

Ingredients
1 1/2 lb red potatoes, halved
1/4 cup half and half
3 tbsp sour cream
1 tbsp butter
1/2 tsp salt
1/4 cup skim milk
Directions
  1. Place potatoes in a medium saucepan and cover with cold water. Bring to a boil, reduce heat to a gentle boil and cook 15 minutes. Drain and then return to pan.

  2. Briefly mash potatoes until broken up. Fold in half and half, sour cream, butter, salt and enough milk to reach desired consistency.
