Recipe Ingredients for Soba Noodle Lomein

9 1/2 ounces soba noodles
8 oz. chicken breast, sliced into strips
1/2 cup carrots
1/2 cup broccoli
1/2 cup bell peppers
5 scallions
1/2 cup mushrooms
1 teaspoon garlic
1/4 cup oyster sauce
2 tablespoons oyster sauce
1/4 cup rice vinegar
2 tablespoons rice vinegar
4 1/2 tablespoons reduced-sodium soy sauce
3 teaspoons sugar
3 teaspoons sesame oil
2 tablespoons canola oil

Recipe Directions for Soba Noodle Lomein

  1. Combine scallions, garlic, oyster sauce, vinegar, soy sauce, sugar, and sesame oil in a large bowl and mix well until sugar is dissolved.

  2. Cook soba noodles in boiling water for 4 minutes, drain.

  3. Meanwhile, heat one tablespoon canola oil in skillet overmedium high heat. Cook chicken strips until done, about 5 minutes. Remove from skillet and keep warm.

  4. Add one tablespoon canola oil to skillet and heat. Add carrots, broccoli, bell peppers, and mushrooms to skillet. Cook until softened.

  5. Add noodles and cooked until crispy in spots.

  6. Add sauce mixture and toss with noodles and vegetables until slightly thickened.
