I just bought a small package of these.  Yikes, are ther expensive or what!?  Does anyone know of a good (healthy) recipe to incorporate them in?

just prepare the noodles according to the package,

steam your favorite veggies and some tofu,

mix w/ soy sauce, garlic and ginger and chow down!

Mine were very cheap at the local oriental grocery store.  Of course I can't read the label so the store owner reccomended them and told me how to cook them. 

I cook mine in boiling water, drain and add to clear soup broth, seasoned with ginger, scallions, garlic and soy sauce.  Sometimes I add snow peas, water chestnuts, slices of carrot, and bamboo shoots.  Some cubes of tofu add protein if I want it.  Soba is so filling - a little goes a long way. 

Wow, all they are are buckwheat flour, wheat flour and water, I wonder why they would be so expensive, super easy to make at home.

 Yum, I think I'm going to do just that... I love snow peas, water chesnuts, and bamboo shoots.  Thanks for the suggestions!
