Recipe Ingredients for Sodium-Free No-Bake Chocolate Oatmeal Cookies

4 oz Unsalted Butter
2 oz Cocoa, Dry Powder, Unsweetened
2 cup Sugars, Granulated
1/2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 serving Salt Substitute
3 cup dry Quick Quaker Oats
4 oz Peanut Butter
1 tsp Vanilla Extract

Recipe Directions for Sodium-Free No-Bake Chocolate Oatmeal Cookies

  1. In a saucepan over medium heat, combine the sugar, cocoa, milk and butter (use a little less butter if you want to cut out some fat & calories - 1/4 C may be okay). Bring to a boil, stirring occasionally.

  2. Boil for 1 minute ONLY (this is important), then remove from heat and cool for 1 minute - also important (if you put the oats in right away the cookies will be mushy).

  3. Stir in the vanilla, salt substitute, peanut butter and oats.

  4. Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in an airtight container. Makes 36 cookies, and virtually no sodium!
