Soft protein bars
I made these when I was trying to make more of a crunchy chewy protein bar, but instead they came out more like a moist browny type of texture. The protein powder used is the "body fortress" brand available at target or walmart.
Vanilla protein bars: 3 cups of dry oatmeal, 1/2 cup sugar free syrup, 1 jello sugar free pudding cup (I did the creme delucsh, kind of vanilla with carmel), 1/2 cup splenda, 4 scoops vanilla protein powder, 2 egg whites. That comes out to 190 Calories per bar (rounded up from 187.5) and 15g of protein (rounded down from 15.25).
I put them in two loaf pans, cooked them for 40 minutes at 300* (spray the pan first!) and let them cooled, cut 4 bars out of each pan. I thought they Taste pretty good too (so did my wife).
Chocolate one is: 2 blended cups oatmeal, 3/4 cup sugar free syrup, 2 tsp of baking powder, 2 scoops chocolate protein powder, 1/4 cup splenda. I cut into six bars. Comes out to 150 calories (rounded down from 151.66) and 10g of protein (rounded down from 10.33). They are pretty good, but I would also suggest maybe doing only 1/2 cup syrup and add 1/4 cup applesauce to make it more moist.
Make sure you mix both REAL well, or parts of your bar will be dry oatmeal.
put in one 9x9 sprayed pan, cooked 15 minutes at 300*.

The addition of the pudding cup is very interesting. I wonder if you added some flaxseed meal if that would firm up the bars. I bet it would be good with chocolate flavor too.
