this is sooo good
I've been making grilled veggies forever and have recently been experimenting. I came up with this concoction that i love - Chop up some bell peppers, red onion, mushrooms, artichoke hearts, tomatoes (really anything you want...). Spray a pan w/ some pam or any cooking spray, throw in the veggies and spray w/ some cal free butter spray and let cook on medium heat for about 15 minutes. I throw in a couple cloves of minced garlic and one or two tablespoons of fat free sour cream and about one tablespoon of dill weed. omg. sooo good and creamy and low cal! Sometimes i'll throw the concoction into a lean cuisine pasta dish but the veggies are great alone!

That's a nice combination. The artichoke hearts must add a lot of interesting flavor to the mixture.
