I've been trying to slap together fresh soups for just a serving or two because I'm tired of leftovers.  Today's was especially good!

2 servings

3/4 cup cooked white beans (cannelini), no salt added
4 cups raw baby spinach
1/2 cup chopped onion
2 cloves garlic, minced
1/4 tsp crushed rosemary
a few grinds of coarse black pepper
2 cups of home made vegetable broth (from the freezer)
1 tbs olive oil
salt to taste

Saute the onion, garlic and rosemary in the olive oil until the onions are soft.  Add everything else.  Cover and simmer until the spinach is cooked, about 3 minutes. 

I ate both servings it was so good.

That sounds really good! I'll have to put some white beans out to soak so I can make some tomorrow. :)
