This week mine is spicy Indian Lentil soup.
2 cups cooked lentils
1 cup chopped onion
1/4 cup grated carrot
1/4 cup finely chopped celery
1/2 cup chopped green bell pepper
1 TBS olive oil
1 tsp curry powder or garam masala, to taste
salt to taste
broth or stock of any kind
Saute the raw vegetables in olive oil until the onions are translucent. Add the lentils and spices and stir well to coat. Saute for about 5 minutes, stirring. Do not scorch. Add 1 quart of stock. Bring to a boil then turn down to a simmer. Cover and cook for 20 minutes. Taste and adjust seasoning.
Serve with a large spoonful of plain yogurt on top. Garnish with fresh cilantro leaves and a lime wedge if desired.

This sounds so good! I am making lentils on Sunday, but the traditional Italian style. Basically same receipe but I just cut carrots, celery, 3 cloves of garlic and onion and sautee for 10 min in olive oil I add to my lentils that are already boiling in 6 cups of water add salt & pepper and crushed red pepper and 1 can of stewed tomatos.
I love lentil soup. You can make it taste totally different by changing the seasonings. Yours sounds yummy with the tomatoes. I do a Mexican style lentil soup with tomatoes, fresh cilantro, cumin and fresh jalapenos.

it's really cold today and the aroma of the soup is just wonderful. Can't wait until it's done!
That sound delicious! I make an easy asian style vegetable chicken soup:
- 1 1/2 cup shredded (skinless & boneless) chicken
- 4 cups chicken stock
- 4 cups water
- 1 whole bok choy or roughly 4 cups chopped
- 1 red bell pepper sliced thinly lenghtwise
- 5 baby portbello mushrooms ( sliced)
- 1 cup chopped spring onions
- 2 tsp low sodium soy sauce
- red pepper flakes (to taste)
Let liquid come to a boil, and stir in chicken & soy sauce. Add in the vegetables, let simmer for about 20 mins or until the veggies are tender. Add red pepper flakes. Enjoy! Serves 4 to 6 depending on how hungry everyone is!
