Soup - Low Carb Lunch
Ok so i've made a nice butternut squash soup to take to work with me for my lunch tomorrow.
The problem is that it takes up a fair amount of my carb quota for the day AND it total's up at only 45cals a bowl ... Eeeek.
But for the life of me i can't think of a single thing i can serve with it ... normally if i took soup i'd take bread.. and bread is a definate no no atm.
Any suggestions of anything low carb that might go nice with soup??
I have veggie sticks with soup when I'm trying to cut down on carbs..
it's only 45 cals, so even if it were ALL carbs it would only be 11 carbs, how is that even substantial? i honestly don't see the problem with pairing it with bread and a string cheese.
also it sounds like you need something SUBSTANTIAL, you're only at 45 cals for lunch...so take a handful of nuts, a yogurt, and maybe a piece of chicken or some beans. carbs aren't bad, especially not coming from butternut squash...i could see if they were refined carbs but they aren't so honestly i wouldn't worry about it.
Peanuts with butternut squash is an awesome combination.
