This is what my family fondly calls 6 egg, 3 cup of sugar cake. I have reduced the sugar to 2 !/2 cups and could probably reduce it to 2 !/4 cups without really affecting the taste of the cake.

Recipe Ingredients for Sour Cream Pound Cake

1 cup butter, softened
2 1/2 cups sugar
6 large eggs, separated
3 cups flour
1/4 teaspoon baking soda
8 oz. sour cream
2 teaspoon vanilla extract
1 teaspoon almond extract

Recipe Directions for Sour Cream Pound Cake

  1. Preheat oven to 325 degrees. Butter and flour a 10-inch tube pan with a removable bottom.

  2. In a large bowl, beat butter and sugar at medium speed until blended, about 1 minute. Add separated egg yolks, one at a time, beating after each addition.

  3. Sift together the flour and baking soda into a medium bowl. Pour the extracts into the sour cream and mix well. Alternately add flour mixture and sour cream mixture into the butter, beating well after each addition, beginning and ending with the flour mixture.

  4. In a large clean bowl, with clean beaters, beat egg whites until stiff, but not dry peaks form. Fold whites into batter. Spoon into prepared tube pan.

  5. Bake in oven for 1 1/4 to 1 1/2 hours or until cake tester inserted in center comes out clean. Transfer pan to a wire rack; let cool for 5 minutes. Remove cake from pan and let cool completely.
