Southwest Chicken Recipe

Ingredients
1 tablespoon vegetable oil
14 ounce diced tomatoes, with green chilies
8 ounce whole kernel corn
1 pinch ground cumin
12 oz. chicken breast
3 ounce black beans
Directions
  1. *Note: Recipe actually calls for 1 (15 ounce) can black beans but analyzer would only compute for raw black beans. Adjusted recipe for calorie and nutritional information.

  2. In a large skillet, heat oil over medium high heat. Brown 4 chicken breasts, boneless, skinless on both sides. Add tomatoes with green chile pappers, beans and corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear. Add a dash of cumin and serve.
