| 29 | ounces low sodium chicken broth |
| 4 | cups chicken breast, cubed cooked |
| 3 | cups corn, frozen |
| 1 | can (10 3/4 ounces) tomato puree |
| 10 | ounces diced tomatoes and green chilies |
| 1/2 | large onion, chopped |
| 1/2 | teaspoon garlic powder |
| 2 | teaspoons ground cumin |
| 1 | teaspoon chili powder |
| 1/4 | teaspoon cayenne pepper |
| 1 | cup brown rice |
Recipe Directions for Southwest Chicken Rice Soup
- Place all ingredients except rice in crockpot
- Cook on high for 3 hours (or until 2 hours before serving time)
- Add in rice
- Let cook for another hour and a half without opening the lid
- Optional: Serve with sour cream, tortilla strips, or cheddar cheese on top
