Soymilk in oatmeal
Ok so my normal breakfast is oatmeal cooked with a banana, wheat bran, and cinnamon cooked in water with 1/2 cup cottage cheese added to the top after cooking (and after it cools a bit)
Today I was out of my normal ingredients and wanted to try something new. So I cooked oatmeal with wheat bran, sliced strawberries, and 1 cup soy milk (to cook it in) and the texture is FUNKY. I did it the same way I cook it with water - 5 minutes in the microwave. But the oats taste undercooked and chewy and the whole thing is soupy. I'm not a huge fan. Do I have to do something different when I'm cooking in a liquid besides water?
Maybe you could cook it with water and add a little soymilk afterwards for flavor. Might work out much better for you
Hmm I usually cook my oatmeal with soy milk and I like it better because it makes my plain oatmeal a little sweeter. To each his own.
If it's soupy, try adding a little less than usual. A cup sounds like a lot. I don't measure mine, but I think it's a little less than half a cup. Just enough to cover the oats. Maybe the oats don't absorb soy milk the way they do water.
You can cook oatmeal in lowfat milk and it's super creamy and yummy.
I agree - cook in low fat milk - don't use quick but use large flake oats - top with a little low sugar jam and sometimes I put almonds on top - my very favourite breakfast : )
Ok, my question is not how should I cook my oatmeal? I actually really enjoy oats cooked in water and I especially love the lack of calories. Since I feel no more full when my oats are cooked in something else. I prefer to add cottage cheese to the top because then it's like MORE food.
However, I cooked my oats in soymilk today and the texture was funny - am I supposed to use less? Cook it for longer? Does anyone know?
What's "funny"? Was it runny? Thick? Chunky? Gritty? If it's runny, use less milk. If it's thick, chunky or sticky, use more milk.
I don't like using milk to cook my oats in. I can never get the amount of milk quite right and it always overflows. Therefore, I cook my oats in half as much water as directed so they're really sticky then I add in 1/2 cup of soymilk.
I know you didn't ask how to cook oatmeal. I'm just offering another way to prepare your oatmeal using soymilk because I don't like the texture of my oatmeal when it's cooked with milk. Adding milk afterwards gives mine the nice creamy texture and just the right amount of sweetness.
I typically make my oatmeal with one cup plain soymilk, dash of vanilla extract, 1/2 cup old fashioned oats, and 1/4 cup raisins/serving. I put it all in a pot and cook it on the stove top over low heat until it is thick and creamy - I don't time it, just go by look. It is pretty much the same way I cook oatmeal regardless of the liquid (water, 1/2 water 1/2 soymilk, 1/2 water 1/2 regular milk, etc). The texture is definitely different and creamier, but I prefer it that way.
If your problem is just that the oats seem undercooked and the whole thing is soupy, you probably just need to try microwaving it for longer.
