So I am vegan and also allergic to wheat-- goodbye spaghetti. Devastating.

But last night I made spaghetti sauce with green beans instead of meat, and big pieces of steamed broccoli instead of noodles. SOOO GOOOD. And totally satisfying. I am having the leftovers for lunch right now and it is even better after stewing together in the fridge all night. Love it, and I'm so excited to have the spaghetti experience again.

(p.s. if you haven't tried spaghetti squash-- seriously. It's beyond.)

I love spaghetti squash.

Have you tried Quinoa pasta (prn keen-wa), it is an Ancient South American grain, no gluten, very high in nutrients and tastes heavenly. You can also buy just quinoa and cook it very similiar to how you cook rice (see pkg for proportions.

Have you checked out some of the gluten free pastas on the market?

Portabella mushrooms (the large ones) grilledl like a burger, or a some grilled or roasted eggplant go great with vegan spaghetti sauce also.

 

I also like making "matchsticks" out of zucchini and eating them with spaghetti sauce.  It's actually very similar to having spaghetti squash with sauce.  So. Freaking. Yummy!!!

You can also use a carrot peeler to cut in to strips, its very similiar to linguini noodles, works with other veggies also

There is also gluten free/wheat free pasta to turn to. Tinkyada, Bionaturae, even Trader Joe's has it's own brand with tons of different shapes! I definitely love spaghetti squash as well!
