Spaghetti Frittata

This recipe is modified from Ellie Krieger from the Food Network.  I made it a few days ago even though I've never made a frittata before.  It was suprisingly easy and it came out so beautiful I took a picture! LOL  It was delicious and my 10 year old loved it!  It gets an A- on the recipe anaylzer too!  I know 10 eggs sounds like a lot but it makes 6 servings at about 225-250 calories each.

Spaghetti Frittata

6 oz. dry spaghetti pasta-cooked and drained

1 cup of your favorite marinara/spaghetti sauce

5 whole eggs

5 egg whites

1 oz. grated parmesan cheese

1 Tbs. olive oil

any veggies you want, onions, mushrooms, tomatoes, peppers, etc.

1-2 cloves garlic, minced

salt and pepper

Preheat a large oven-safe skillet over medium high heat.  Add olive oil, garlic, and veggies (I used onions and mushrooms) and cook for 3-5 minutes until softened.  In a separate bowl beat together whole eggs and egg whites and set aside.  When veggies are done add cooked pasta and spaghetti sauce to skillet and mix well.  Pour egg mixture over pasta and mix gently to distribute evenly throughout.  Turn heat down to medium low and let cook for 6-8 minutes without stirring until edges are set (center will NOT be set).  Meanwhile, preheat broiler and place rack 10-12 inches below it.  When the edges are set remove from heat, sprinkle with parmesan cheese and salt and pepper to taste.  Place the skillet under the broiler for 2-3 minutes until the cheese is lightly browned and the center of the frittata is set.  Remove from oven and let cool for a few minutes before cutting into 6 wedges.

i love frittata, but this just sounds weird.

LOL! I thought so too with the pasta and eggs but it really is wonderful!!

I make a pasta fritatta really similar to this one.  I know it sounds weird at first, but it's really it good.  I make it a lot for dinner parties.  It reheats really well, too, so you can get some awesome leftovers.

Fritatta is a great way to pad out any kind of leftovers, and make a delicious healthy meal.  I make them about once a week.  Try leftover stir-fry, any kind of pasta, roasted vegetables with bacon, you name it!  Serve with salad and crusty bread or a baked potato.  Yummy.
