Spaghetti and Meatballs (by Jessical Seinfeld, "Deceptively Delicious") Recipe

Makes 6 servings



** 1 serving includes about 2 to 3 meatballs ** Could use less breadcrumbs

Ingredients
1/2 lb turkey, lean, ground
1 cup breadcrumbs
1 cup butternut squash, pureed (about 1/2 cup)
1 clove garlic, minced
1 tsp salt
1/2 tsp black pepper
1 Nonstick cooking spray
2 tsp olive oil
26 ounce whole tomatoes, with their juice
1/2 cup water
1/2 cup carrot, pureed (about 1/4 cup), optional
1/4 tsp garlic powder
1 pinch cayenne pepper
1/8 tsp pepper
1 lb spaghetti , preferably whole wheat
Directions
  1. In a large bowl, mix the turkey, breadcrumbs, butternut squash puree, garlic, 1/2 tsp salt, and 1/4 tsp black pepper until well combined. Shap the mixture into 1" meatballs and place on a sheet of waxed paper or aluminum foil.

  2. Coat a large nonstick skillet with cooking spray and set it over high heat. When the skillet is hot, add the olive oil and then the meatballs and brown for 4 to 5 minutes, turning occasionally.

  3. Add the pureed tomatoes, water, carrot puree (if using), garlic powder, cayenne, and the remainin 1/2 tsp salt and 1/8 tsp pepper. Reduce the heat to low and simmer for 15 to 20 minutes, or until the meatballs are no longer pink in the center.

  4. Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain the pasta in a colander, turn it into a serving bowl, and spoon the meatballs and sauce over it.
