Can anybody here provide me with a good home made recipe for spaghetti sauce. Nothing too complicated. I have the basic spices only. I would appreciate it very much.
I like Mario Batale's (of Molto Mario on the Food Network) "Basic Tomato Sauce". It's just onions and garlic, sauteed in olive oil, and chopped (or crushed, canned) tomatoes added, then simmered until thickened. It's very good. Herbs and spices can be added to taste.
The easiest sugo I know starts with olive oil and a garlic clove cut into two flat halves. Remove garlic when it starts to sizzle. Add ripe cherry tomatoes (quantity depends on how many the sauce is to serve). Cook it down, flattening the tomatoes as they become softer. Salt. Cook down until there is no more water-liquid, just olive oil. I put in some crushed red hot pepper at the start because I like a little bit of a kick. This is the most basic sugo thre is, but when I serve it to friends in the US they really love it! Just use maybe 8 cherry tomatoes per person, less if they are the larger picadilly type.
I appreciate your suggestions. Sounds easy. Hope it is. I have tried other recipes from people but just never seems right. Maybe my spices are too old?l
stanbob, you really don't need much spice for basic tomato sauce. A little sprinkle of dry oregano, or a few chopped leaves of fresh basil, or some chopped fresh parsley are a nice addition though.
Canned tomatoes are fine. In fact, cooked tomatoes have more available nutrients than raw, especially lycopene. If your sauce seems thin or bland, stir in a couple of tablespoon of tomato paste.
Here's something really simple you can do to sauce your pasta.
In a large saute pan, heat some olive oil and slice garlic until the garlic sizzles. Add chopped onions and some canned tomatoes. While the pasta is cooking, simmer your simple sauce. When you drain the pasta, add about a half cup of the water the pasta cooked in. Put the drained pasta into the saute pan and toss until coated, over low heat. The pasta will soak up all the flavor.
You can start this with a little ground meat, such as turkey breast, and add the onions, garlic and tomato to that. There are so many variations of this kind of sauce, called a condimento in Italian.
gee, thanks everybody for these recipes. I am so anxious to try them. Pasta has always been my favorite, but when I make it, I have to buy my own sauce.

Hmm...I typed in a search "tomato pasta sauce" and got 100 recipes! It appeared most were from scratch type recipes. Try fooling around with your search value.
Thanks again. I typed in spaghetti sauce and all I got was the commercial brands. "Tomato Pasta Sauce" and "Basic Tomato Sauce" did the trick. I love homemade sauces. In fact I could just eat the sauce and forget the pasta.
