spaghetti squash?

has anyone here tried spaghetti squash.  i had some today for the first time--i prepared it just like spaghetti with sauce and meat--and it was awesome.  it tastes exactly like angel hair spaghetti, expect its not starchy pasta, its a vegetable.  MUCH healthier and exactly the same taste.  just thought i'd share that with ya.

i LOVE spaghetti squash. yummy! i prefer it over "the real stuff".

i just posted that i tried it tonight too!! it was great, and my 3 year old ate it no problem, although he is not your typical picky eater. i'm actually more finicky then he is. did you find that it was watery? i just was looking around for more recipes (after looking how to cook it and such) and someone said to drain it and press it with paper towels. only one person mentioned to do that and no one else mentioned it at all. guess they were just assuming people would drain it like spaghetti! i didn't but will try it next time. i feel like i should buy one for everyday of the week, and am moving to a place with a large yard and think i will try to grow them in the winter months! cheers to spaghetti squash, my new favorite food. now to make my 65 calorie a piece chocolate chocolate chip cookies!

 

 

 

yeah it was watery.  i had to put it in a collinder and strain it even after i had already put the spaghetti sauce on.  but thats fine by me.  im insulin resistant and cant eat much of anything that turns into sugar in my blood and i hate vegetables, so to have a healthy vegetable that tastes like spaghetti is amazing.

I just discovered this too, soo good!  I haven tried it as spaghetti yet.

This is how I cooked it:  cut in half lengthwise, put in a dish cut side down with a cup of water and bake 30-35 min, scoop out insides with a fork.  saute in a wok with non stick cooking spray, mushrooms, olives, tomatoes... any veggies you want really.  Then add the sauted veggeis to the squash and stir in a little feta cheese.  Makes an amazing side dish.  The first time I made it I ate the whole bowl, lol.  Good thing its low in cals!

Any other cooking ideas for it?

I had spaghetti squash tonight too!!! I mixed it with brussels sprouts that were roasted in olive oil & garlic & grilled onions and had a nice big piece of salmon too! Quite a delicious meal if you ask me! 

i'm sure that i will get sick of it at some point, but after finding all these great and diverse recipes, i feel like i won't eat anything else for dinner again. i have a problem with eating WAY too much for dinner. like all the leftovers! thank goodness i try to make small portions so that there aren't too many leftovers! ahhh, the trials and tribulations of getting rid of those last few pounds!

Wow I guess it was the night for firsts....I tried spaghetti squash for the first time last night and I was skeptical at first but I have to say it was great...mine wasnt soggy like others described...I boiled the whole squash for about 30 minutes then cut it in half and removed the seeds.  I then took a fork and scrapped the inside which gave me the spaghetti...I didnt have any spaghetti sauce so I added garlic, spaghetti spices, mushrooms and garlic salsa...the taste in my opinion was fantastic...

I've not been able to find spaghetti squash around anywhere in the city I live in!

I'd love to be able to find it, I really really miss pasta (and hate the gluten free alternative that totally burn a hole in your pocket). 

Any UK suggestions?

Yes, We love it. I use it in place of pasta. Sooo good for you and just a few calories. It is a miracle food!!! Smile

I tried it for the first time on Monday. I'd read so many people raving about it on a previous thread that I went out and got one, but I had no idea how to prepare it.

I ended up coring, peeling and cubing it, adding it to my soup. I wanted to like it, but was preparing myself not to like it (I'm not very adventurous when it comes to new veggies), but was pleasantly surprised! The texture and color reminded me a bit of pineapple.

Does anybody know the cals right off?

 Spaghetti squash has about 45 calories a cup. Regular spaghetti pasta noodles have about 220 calories a cup. But it is not just about the calories. Spaghetti squash is so good for you. It is a complex carb and full of vitamins , minerals and fiber..

I usually hate vegetables and Im doing low carb, so the fact that I can taste spaghetti while eating a vegetable is amazing.  usually substitute foods are never as good as the orginal but this one is.

I saw this post and just had to reply. When my son was on the ketogenic diet for seizures we made him spaghettie squash instead of noodles.

We cut in half and baked cut side down. I then scraped out noodles and would boil them for about 15 extra minutes to take away the squashy flavor. I then would take a dish towel and line with several paper towels to squeeze out the water. We had to do this since his diet only allowed so many grams- more water= more grams. 

We used the squash noodles and made spaghetti alternative and beef strongeoff. We havent done it since then since it cost alot and alot of work but I have been wanting to recreate a thai turkey peanut butter recipe and this might be the way to make it healthy!!
