Spaghetti squash suggestions

I have a spaghetti squash in the oven, and I'm not really sure what to do with it now.  I know you can put pasta sauce on it, but I'm not really feeling that today.  How about a little olive oil, salt, pepper, and parmesan?  Any other suggestions?

I got a great recipe in NROLFW for spaghetti squash. Throw some ground turkey,  chopped zucchini, some canned tomatoes, and garlic into a saute pan. Cook about 10 minutes and put over the squash. It's delicious!!

- squash/veggie soup/stew

- stir fry/roast/grill with other veggies

- casserole

- quiche

If you're really ambitious and have time on your hands, try bread!

South Beach has a great spaghetti squash recipe. You steam the spaghetti squash in the microwave in 1/4 cup water for 8 - 10 minutes. Saute 1 medium, red onion and 1 zuchini in 2 tblsps olive oil.  Add 4 medium tomatoes, diced and salt & pepper to taste, reduce heat and simmer for 10 minutes. 

The recipe says to mound the spaghetti squash in a bowl and spoon the sauce over the top, but I like to mix it all together in the pan and then serve. You can drizzle more olive oil and parmesan cheese if you like. Makes 4 servings.

190 calories, 5 g protein, 28 g carbohydrates, 9 g saturated fat, 199 mg sodium, o cholesterol, 6 g fiber.

I know  I've seen more threads on this same subject. If you search forums you'll find about 20 replies mostly recipes.  Here's a link that might save you some clicking and you can just go results.

last time I had spaghetti squash I had it with sliced chicken sausage, choppped greens, onions, and peppers. Then I added some parmesan cheese on top. It was delicious and pretty low cal. I think the chicken sausage I had was 140 calories per link and it had spinach and goat cheese.
