Special Fish Pie Recipe

The ultimate comfort food! Made in the crockpot.

Ingredients
16 ounces sole fillet
2 tbsp cornstarch
1 cup canned corn, drained
1 cup frozen peas, defrosted
1/2 cup cream cheese
2/3 cup skim milk
1/4 cup bread crumbs, whole wheat
1/2 cup grated cheddar cheese
1 salt and pepper to taste
Directions
  1. Cut the sole (or other white fish) into bite-size pieces and toss with cornstarch.

  2. Add the corn and peas and mix together well.

  3. In a separate bowl, blend the cream cheese and milk. Season with salt and pepper.

  4. Pour over fish mixture. Spoon fish mixture into ceramic pot and cook on high for 2 hours.

  5. Combine the bread crumbs and grated cheese. Spoon over fish mixture and place the crock under a moderate broiler for 5 minutes.
