Spiced Apple Butternut Squash Soup Recipe

Kraft recipes

Ingredients
2 tbsp smart balance light
1 medium onion
1/8 tsp nutmeg
2 medium granny smith apples
43 oz vegetable broth
1/2 cup cream cheese
6 cups diced butternut squash
Directions
  1. Melt butter

  2. Add onion stir, 4 min.

  3. Add nutmeg, 1 min

  4. Add squash, apples and broth, stir

  5. Bring to boil

  6. Reduce heat to low, cover

  7. Simmer 50 min or until squash is tender

  8. Cool Slightly

  9. Add batches to blender

  10. Return to saucepan

  11. Spoon into bowls with 1 tbsp cream cheese
