Delicious, quick dinner.
| 1 | cup black beans, dry |
| 14 | oz tomatoes, peeled and diced |
| 1 | cup hot salsa |
| 1 | tbsp canola oil |
| 1 | cup onion, diced |
| 1 | tbsp garlic, minced |
| 1 | tbsp cumin |
| 1 | tbsp oregano |
| 1 | tsp garlic salt |
| 1 | tsp salt |
- Cook black beans in pressure cooker; drain, reserving cooking liquid.
- Heat oil in large, deep saucepan. When hot, add cumin seeds.
- When cumin seeds sizzle, add onion and garlic and saute about 2 minutes.
- Add tomatoes, salsa, oregano and beans. Cover, turn heat to low and simmer 10 minutes.
- Serve garnished with sour cream or cheddar cheese.
