Spicy Black Bean Soup Recipe

Makes 4 servings


Delicious, quick dinner.

Ingredients
1 cup black beans, dry
14 oz tomatoes, peeled and diced
1 cup hot salsa
1 tbsp canola oil
1 cup onion, diced
1 tbsp garlic, minced
1 tbsp cumin
1 tbsp oregano
1 tsp garlic salt
1 tsp salt
Directions
  1. Cook black beans in pressure cooker; drain, reserving cooking liquid.

  2. Heat oil in large, deep saucepan. When hot, add cumin seeds.

  3. When cumin seeds sizzle, add onion and garlic and saute about 2 minutes.

  4. Add tomatoes, salsa, oregano and beans. Cover, turn heat to low and simmer 10 minutes.

  5. Serve garnished with sour cream or cheddar cheese.
