Spicy Continental Rissoles Recipe

Makes 4 servings


a nice dish, either as a main meal with extras or as a snack, quite high in protein

Ingredients
8 oz green lentils (continental)
1/2 pints water
1 large onion
1 garlic clove
1 small green pepper
1 tsp turmeric
1 tsp coriander
1 tsp cumin
1/2 tsp chili powder
20 g salted butter
1 egg
2 slices nimble wholegrain bread
Directions
  1. wash and soak letils, rinse them and put them in a saucepan with the water

  2. simmer the lentils gently until they have absorbed all the liquid and are tender (30-45 minutes)

  3. chop the onion

  4. heat the butter in a frying pan and fry the onion for 5 minutes or so

  5. add the garlic and green pepper (chopped and deseeded) to the onion and cook for anothe 5 minutes

  6. stir in the spices and cook fo another few minutes

  7. add the onion mixture to the cooked lentils and season, then allow to cool

  8. form into small rissoles and dip into the beaten egg then into dried bread crumbs

  9. i then cook them on a george foreman, but you can shallow fry them, just add more butter or oil, whichever you use, until they are crisy on both sides (dain on ktchen paper if you fry)
