Low-GI chunky, filling omelette
| 2 | eggs |
| 2 | oz kidney beans |
| 4 | oz new potatoes, boiled |
| 1/2 | courgette, diced small |
| 1 | chili pepper, deseeded and finely chopped |
| 2 | spring onions, (scallions) chopped |
| 1 | tsp olive oil |
| 1 | tomato, chopped |
| 1/2 | oz cheese |
- Whisk the eggs in a bowl and add the chili pepper, beans, spring onions and tomato
- Heat the olive oil in a small non-stick frying pan
- Slice the potatoes and add to the pan with the courgette. Saute for a few minutes allowing them to brown a little
- Pour the egg mixture over the top and spread evenly, tipping the pan to bring runny pools of egg to the edges
- When set, sprinkle on the cheese, place the pan under a hot grill and cook until bubbling and golden
- Serve in thick wedges either hot or cold
