Spicy Green Beans Recipe

Makes 4 servings


Great side dish. Madhur Jaffrey's recipe minus the tomatoes.

Ingredients
1 lb green beans, frozen
1 medium onion, diced
3 tbsp raw ginger, minced
3 tbsp garlic, minced
2 tbsp canola oil
2 tsp cumin seeds
1/8 tsp cayenne pepper
2 tsp coriander
1/2 tsp salt
3 tbsp lemon juice
Directions
  1. Heat oil in large deep saucepan. When hot, add cumin seeds.

  2. When cumin seeds sizzle, add garlic and ginger and saute about 2 minutes.

  3. Add onions and saute about 3-5 minutes.

  4. Add spices and saute about 2 minutes.

  5. Add green beans. Stir to mix, turn heat to medium low, cover and cook about 6 minutes.

  6. Add lemon juice. Cook uncovered about 2 minutes.

  7. Garnish generously with black pepper and serve.
