Great side dish. Madhur Jaffrey's recipe minus the tomatoes.
| 1 | lb green beans, frozen |
| 1 | medium onion, diced |
| 3 | tbsp raw ginger, minced |
| 3 | tbsp garlic, minced |
| 2 | tbsp canola oil |
| 2 | tsp cumin seeds |
| 1/8 | tsp cayenne pepper |
| 2 | tsp coriander |
| 1/2 | tsp salt |
| 3 | tbsp lemon juice |
- Heat oil in large deep saucepan. When hot, add cumin seeds.
- When cumin seeds sizzle, add garlic and ginger and saute about 2 minutes.
- Add onions and saute about 3-5 minutes.
- Add spices and saute about 2 minutes.
- Add green beans. Stir to mix, turn heat to medium low, cover and cook about 6 minutes.
- Add lemon juice. Cook uncovered about 2 minutes.
- Garnish generously with black pepper and serve.
