Spicy Tuna Patty Melt

1 can tuna fish (I prefer white albacore no salt added, canned in water)
1 tbsp mayo (or whatever low-fat/soy substitute you like)
1/4 cup bread crumbs
1 tsp onion powder
2 tsp minced garlic
dash of red pepper
Slice of pepperjack cheese (low/no fat varieties welcome!)

Combine tuna, mayo, bread crumbs, onion powerd, garlic, and red pepper in bowl. Mix well with fork. You can also combine these in a blender or food processor if you prefer. You may want to add additional spices or flavors to your liking. Example: seasoning salt, ground black pepper, lemon juice... all of these things would go well in the patty.

Lightly coat skillet with (low-fat) Pam spray and place on burner at Medium setting. Leave sit.

Take a handful of the tuna mixture and pat it together in a "hamburger" styled patty. You should be able to make 2. Place patties on warmed skillet (should be a nice sizzle noise when you set them on). Cook for 3-5mins on each side or until tops are a golden brown color.

Place half slice of pepperjack cheese on each patty. Cover skillet with lid for 1min or until cheese is melted.

Sprinkle with more red pepper and eat! I ate mine without bread, and it was surprisingly filling and fantastic. You could easily cook up some veggies to eat along with it as well.

Approx Calories = 250 for both patties + cheese!
