Spinach, Broccoli and Carrot Quiche

Ingredients
1 tsp vegetable oil
1/2 onion, diced
1 clove garlic, minced
10 ounce frozen chopped spinach, thawed
1/4 cup shredded carrots
2 cups broccoli, chopped
1/2 cup Monterey Jack cheese, shredded
4 oz shredded cheddar cheese, shredded
1 cup Egg Beaters
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 teaspoon pepper
1 pie crust
Directions
  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Heat the oil in a skillet over medium heat, and cook the onion until tender. Mix in the garlic, spinach, broccoli, and carrots, and cook until the spinach liquid has evaporated. Remove skillet from heat, and mix in cheese and egg substitute. Season with red pepper, nutmeg, salt, and pepper. Pour the mixture into the pie crust. Bake 30 minutes in the preheated oven, until a toothpick inserted in the center of a quiche comes out clean.
