| 2 | eggs |
| 1/4 | cup olive oil |
| 1/2 | cup low-fat yogurt |
| 1 1/2 | cups flour |
| 100 | g feta cheese, crumbled |
| 1/4 | cup parmesan cheese |
| 2 | cups baby spinach leaves, roughly chopped (stems removed) |
| 12 | dried tomatoes, cut into thirds |
| 2 | tblsp marjoram or oregano, finely chopped |
- Pre heat oven to 200 deg cel
- whicsk together eggs, oil and yogurt
- add flour, feta, parmesan and spinach, and stir until combined.
- Spoon mixture into tins and top with a piece of tomato and sprinkle with marjoram or oregano.
- bake for 12-15 mins, until puffed and lightly golden
