I usually just steam it until wilted or put it raw in salads. Spinach is so good that I don't want to add anything to it.
From frozen spinach: I put it in pasta sauce. I bake it with eggs and fat free cheese in a crustless "quiche." I make soup with it, chicken broth mushrooms, orzo, and an egg (sounds weird but is delish!). I use it in veggie lasagna. I steam it with garlic and lemon. And, I use it in even more dishes, so ask if you want to know! :D
With fresh spinach: Like Claire, I do salads. I also use it on sandwiches and wraps. And, sometimes, I make a dip with it for carrots, broccoli, or baked chips. For the dip, I've used fat free sour cream or plain yogurt and either salsa (yes, it is good) or garlic/onion soup mix. And, I've also done it with the powdered "ranch" spices added to the spinach and ff sour cream or yogurt.

Spinach added to lasgna, in soups, in eggs. If you chopp it small enough you can hide it in anything, the kids will never know.
i can get anybody to eat spinach if i throw it in a wok and add a little minced garlic, a little soy sauce, and a little butter substitute.
Ever heard of param longsoong (sp)? It's Thai dish with chicken over (steamed) spinach and peanut sauce. It's usually served with steamed rice but at home I like to sub roasted potatoes (esp gold yukons).
i like mixing spinach with oatmeal.
Look for recipes that are "Florentine." That kind of dish is made with spinach. There are hundreds of recipes and not all of them are rich or fatty.

...but I dropped the olive oil entirely and steamed the onions, mushrooms, and spinach; then I got some of those low-fat low-sodium tortilla shells.
I used normal shredded cheddar cheese because it's tasty. I was gonna try the low-fat stuff, but it's barely less fat, has a ton more sodium, and tastes worse. Better to just use real cheddar cheese imo and just go sparingly with it.
Tasty and healthy...plus they're really easy and fast to make.
I like to make my version of a traditional spinach salad.
I take baby spinach, top it with a hard boiled egg, sliced of course, and add a couple tablespoons of bacon bits, or imitation bacon bits, and add Newmans' own lightened up honey mustard dressing.
It's really good for a summer supper, maybe paired with grilled chicken breast.
Also, for breakfast I make a version of Joe's special.
In a pan fry up some turkey sausage, add garlic and onions, toss in spinach. In a bowl scramble eggs with a little milk or water, whatever you prefer. Add eggs to spinach mixture and cook until done. Sprinkle with parmesan cheese.
My mom ordered this at a little restaurant we used to go to when I was little. It burnt down, and I try to make this for her every Mother's Day so that she can still have it. Sometimes, I just use reduced fat sausage (Jimmy Dean, in the tube) instead of turkey sausage, especially if someone different is going to be eating it. It works good for brunches too, because it can be served at room temperature.

I love spinach. I will add it to my egg white omelet's. I love love spinach dip, however it does take a few calories from the day up. It's basically frozen spinach (thawed), sour cream (light), diced onion, diced water chestnuts, and a packet of vegetable mix. Mix it all together and use your choice of bread/cracker to enjoy. It's best if you let it sit in the fridge for a little bit, the flavors meld together more. I also add it to my salads... half lettuce/half spinach. You can add it to spaghetti/fettuccine either in the sauce or just as an extra! I also love creamed spinach... cook down fresh spinach with a little olive oil, sprinkle with a little flour and a dash of milk. You'll need to add thyme and basil, possibly some reduced fat mozzarella cheese to make it perfect. Last thing I can think of is using it in sandwiches rather than always just having lettuce, its very tasty!

I saw Ellie Krieger make a delicious looking quesadilla once and it is pretty much my favorite quesadilla ever:
Dice a split chicken breast and cook in in a pan sprayed with either pam or a bit of olive oil.
Add a diced onion and some garlic.
Add about a tbsp of cumin (or to taste, I can't get enough of the stuff). Throw about a cup or however much you want of baby leaf spinach and mix it in until it wilts down.
Put that aside ad in another pan heat up a whole wheat tortilla, spread the chicken/spinach mixture on one half and sprinkle with some sharp cheddar, you don't even need much cheese, unless you want it. Fold it over and flip so the cheese gets nice and melty. Serve with salsa or light sour cream.
It is so good and you don't end up using too much cheese because there is so much other good stuff inside!
I like putting it on pizza, yum. :x
