Classic dish of spinach flavored with garlic and olive oil. Very easy.
| 2 | pounds fresh spinach, washed |
| 4 | cloves garlic, cut in half |
| 2 | tbs olive oil |
| 1/4 | tsp salt |
- Put the garlic halves and olive oil into a large saute pan with a lid.
- Slowly heat until the garlic sizzles and begins to turn golden on the edges.
- Remove the garlic from the pan.
- Shake some of the water off the spinach leaves
- Begin to add the spinach to the pan, tossing to coat with olive oil.
- Put the lid on and allow it to wilt down before adding more spinach
- Continue until all the spinach is in the pan
- Cover and simmer on low for a few minutes.
- Remove from the pan, drain well and chop before serving.
- Season with salt to taste.
