Low-gi, lower fat version of an italian classic
| 8 | oz (lasagne sheets) pasta |
| 6 | (1oz) slices smoked ham |
| 10 | oz frozen spinach, defrosted and drained |
| 1 | tsp nutmeg, grated |
| 8 | oz (chestnut) mushrooms, sliced |
| 500 | g (passata) chopped tomatoes |
| 1 | onion, finely chopped |
| 2 | cloves garlic, crushed |
| 2 | tsps olive oil |
| 1 | pinch oregano |
| 1 | tablespoon flour |
| 1 | tablespoon margarine |
| 1/2 | pint milk |
| 2 | tablespoons parmesan cheese |
| 1 | Salt and pepper |
- Preheat the oven to Gas 5 or 190C
- Heat the olive oil in a saute pan and gently cook the onion and garlic until softened and golden
- Add the sliced mushrooms to the pan and cook until tender
- Add the passata, oregano and seasoning, bring to a simmer and cook for 10 minutes
- Make the white sauce by melting in the margarine in a small saucepan
- Take the pan from the heat and stir in the flour to make a paste
- Return to a very gentle heat and cook for a minute or two, stirring occasionally.
- Add the milk, a little at a time, stirring constantly until the sauce thickens.
- Remove from the heat and reserve
- Assemble the lasagne by spreading a few tablespoons of tomato/mushroom sauce in the bottom of a suitable dish
- Place a single layer of lasagne sheets on top
- Spread half the spinach onto the lasagne and season with plenty of black pepper and grated nutmeg
- Place a layer of ham over the spinach and pour half the tomato sauce onto the ham
- Repeat these layers and finish with a layer of pasta
- Pour the white sauce over the top, spreading it out carefully so that no dry bits of pasta are showing.
- Season and sprinkle with cheese
- Bake in the oven for 40 - 50 minutes until the pasta is tender and the top is bubbling.
